my mom's family made a cookbook.
a really yummy cookbook.
i decided that if julie could cook through julia's cookbook
i could try and cook through the dodge family cookbook.
so i've started.
not a recipe a day...too ambitious for me thank you very much!
but a few a week maybe.
this yummy chicken was my first recipe.
it's fresh and healthy and oh so good!!
it is from my cousin rachelle.
incidentally, i have decided that recipes say a lot about a person.
it's been interesting to see what my cousins cook for their families.
it's a cool insight into what kind of a mom/wife they are.
cilantro lime chicken
2 Tbsp lime juice (one lime juiced) 4 Tbsp. olive oil
zest of one lime salt and pepper
1 Tbsp chopped cilantro 4 chicken breasts
2 cloves garlic, minced
mix all ingredients together to make a marinade. marinade chicken for 1-3 hours and then grill. top with avacado salsa.
avacado salsa
2 avacados (1 mashed, 1 cubed) 1 Tbsp chopped cilantro
3 Tbsp chopped onion (yellow or white) 1 Tbsp lime juice
1 jalapeno, seeded and minced 1 clove garlic, minced
1 diced tomato salt to taste
mix together and serve on top of chicken.
i tell ya, you'll feel healthier just eating this and it's delish.
i served it with my niece's jalapeno rice, which i love, love, love.
jalapeno rice
1 cup instant rice 1 can cr of celery soup
1 cup sour cream 1 cup shredded cheese
1 can diced jalapenos (i like to use the mexican kind)
mix all ingredients together. pour into an 8x8 pan sprayed with cooking spray.
bake at 350 for 25-30 minutes.
i hope you try this out....i'm tellin ya, it's delightfully delicious!

Now I'm all freaked out. Brandon's extended family did a cookbook and I just contributed a couple of easy desserts to it (mostly because my favorite things to cook are in my head... I can't pin down exact amounts ;) Anyway... now I'm worried they're all thinking, oh THAT'S what she cooks for her family. Hmmm... interesting.
I'm getting so much out of your blog! I feel like I'm visiting a friend in her kitchen, just takes be back to the days of raising kids (that I am SO over!) but from my 'grammy' point of view (lol), I now find it so refreshing - it's kind of like standing downwind of sheets billowing in the sun under the clothesline.
Just wanted to offer a suggestion for your Lime-Cilantro chicken dish- if you want to use the frozen lime margarita mix (Bacardi brand) rather than straight lime juice, then drizzle a little margarita salt over the tops when done - you can call it Margarita Chicken. (The larger salt grains add a special touch and crunch).
