My favorite vacations are the ones when we don't have a jam-packed schedule. All of our vacations are centered around visiting family (because, honestly, who can afford travel AND a hotel these days?). I love just sitting around and talking, helping someone make dinner or work on a project, walks around the neighborhood, etc.
If I come home from vacation feeling like I need a week to recover, then it was an activity- maybe even a fun one- but not a vacation. I like to come home feeling like I've had some time off from my regular duties, and even feeling a little anxious to get back to "the routine."
That said, I would really love to take my kids to Disney in their Tween years... when they are old enough to help pack and unpack, old enough to ride all the rides and REMEMBER, old enough to be "into" a jam-packed schedule trying to do and experience EVERYTHING... but not so old that they think everything is lame or want to go off and do things on their own. There are different seasons of life for different types of vacations, I think.
