Balsamic Glazed Pork Chops

This is my hands down most requested recipe ever! Everyone that has tried it loves it, even my brother in law who hates pork chops! If you don't eat pork for whatever reason, feel free to substitute chicken breasts for the pork chops. Pair this with a green salad and a side of your favorite potatoes and you'll have a meal your guests will love!

BALSAMIC GLAZED PORK CHOPS

2 T cold butter

3 T Extra Virgin Olive Oil

4 one inch thick pork loin chops

Salt and Pepper

1 small onion chopped

1 tsp thyme leaves

1 tsp rosemary

3 cloves garlic chopped

¼ c balsamic vinegar

2 T honey

1 c chicken stock

Add 2 T of the oil to a skillet. Season the pork with salt and pepper and place in the hot skillet. Cook the chops for 5 minutes on each side. Transfer the chops to a platter and cover with foil. Return the pan to the heat, add remaining Tablespoon of oil and the onions, thyme, rosemary and garlic. Saute for 4-5 minutes. Add the balsamic vinegar, honey, and chicken stock. Cook until liquids have reduced by half. Turn off the heat and add cold butter. Stir and shake the pan until the butter melts. Add the chops to the pan and coat them in the glaze.
