Marci's Mom's Zucchini Casserole

I'm lucky enough to live near Marci's mom... she brings me produce and recipes, and she has the sweetest smile and disposition ever! I know if she could, she'd share with all of you too, so I thought I'd share... this was DELICIOUS, by the way! And completely good for you, because it's vegetables, right? Right?! ;)
Zucchini Casserole

1/2 cup onions, chopped
6 cups sliced zucchini
1 can cream of chicken soup
2 grated carrots
1 cup sour cream
2 cups shredded cheese
1 pkg seasoned stuffing mix

Cook zucchini, carrots, onions for 3-5 minutes (steam them using very little water)

Combine soup, sour cream, cheese, and cooked vegetables.

Make stuffing as directed on package; spread 1/2 of the stuffing on the bottom of a casserole dish.

Put vegetables over bottom layer of stuffing; add remaining stuffing on top. Put slivered almonds on top, if desired.

Bake at 350° for 30 minutes.

i'm glad that she's adopted you! hey we could be sisters through adoption...that would be sweet!!

It looks heavenly! If only my zucchini plant didn't succumb to the evil squash bugs this year... :(

This is one of my all-time favorite summer recipes. We call it "Garden Galore" at our house.
