remember a while ago when i asked about freezable dinners? well i found this awesome thing called dump chicken. it is easy peasy lemon squeezy and i thought i would share the first one we tried. i used one of my crocks that i have and put a 1 gallon freezer bag in it...it made it really easy to add the ingredients and the bags freeze nice and flat to store in the freezer. the other thing that was awesome is that i had most ingredients on hand. i bought cheap chicken breasts.
jammin dump chicken
3/4 cup ketchup
3/4 cup blackberry, strawberry, peach or apricot jam (i used peach)
1/4 cup white vinegar
1 tsp worcestershire
2 tsp chili powder
1/8 tsp salt
1 1/2 lbs chicken pieces
For freezing: Place all ingredients in a 1 gallon freezer bag. To thaw and cook:: You can take it out the night before if you want to thaw it in the fridge. I just thaw it in the microwave and then throw it into the crockpot for 4-5 hrs. When this was just about done I added rice to the pot and cooked it in the juices. Yummy! You want to watch the rice in case you need to add more water.
For baking: If you want to bake it then preheat oven to 350. Pour into baking dish and bake until juices run clear, about 30-60 minutes depending on chicken pieces used.
how easy is that? i just did a couple each night until i had a stock built up. i'll share the other recipes as we try them.:D
